Dice large sweet potato (after peeling)
Dice large Idaho potato (after peeling)
Dice large onion
1 quart homemade chicken stock
Thick slice of ham (1/2″) cubed
3 cloves of garlic, rough chop
2 tsp rosemary
2 tsp oregano
2 tsp parsley
Pinch of red pepper flakes
1 cup of white wine (optional)
Salt and pepper to taste
Add all items to large stock-pot, turn heat on low. If stock does not cover ingredients add water until everything is covered.
Simmer until Idaho potato are soft. Sweet potatoes maybe very soft. Don’t worry this will flavor the broth.
Serve with just a bit of grated parmesan cheese on top.
