I didn’t realize this afternoon when I threw chicken legs and thighs into brine that Julia Child would have been 100 today. However, her words always ring in my my head, good fresh ingredients made good dishes, no need to be fancy. These are words I live by. I don’t have the time to make fancy French dishes. But I do have time to buy quality ingredients. The difference does make a difference in the final product.
Chicken brined with salt and Old Bay baked over sweet potatoes and redskin potatoes. Served with yellow heirloom tomatoes, basil, and cheese.
