Awesome blend of texture and flavor all together in a chocolate and nut heaven.
- 1 9 inch pie shell
- 1 cup organic dark brown sugar
- 1 cup light corn syrup
- 2 tbsp butter
- 4 eggs beaten
- 1/4 cup bourbon
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans
Preheat oven to 325 degrees F.
Place pie crust in pie pan, crimp edges. Prick the bottom of the dough with a fork. Bake in oven for 15 min. Let cool.
In a small saucepan combine dark brown sugar, bourbon, corn syrup, and butter. Bring to a boil, stirring constantly, remove from heat and let it cool slightly.
In a bowl, mix together eggs, vailla and salt. SLOWLY drizzle brown sugar syrup into the eggs, stirring continuously with a whisk. GO VERY SLOW you do not want to cook the eggs. Continue drizzling and whisking until the last of the brown sugar syrup has been poured into the eggs.
Scatter the pecans and chocolate chips over the cooled pie crust.
Pour egg and syrup mix over the pecans and chocolate chips. Carefully place pie in over.
Bake in preheated oven for 1 hour. Top should be puffy and crust should be golden. Let cool for about 1 hour before serving.
