Chocolate Banana Bread
- 1 medium avocado
- 2 ripe bananas
- 3/4 cup organic sugar
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp lemon juice
- 1/4 cup oil (avocado, sunflower, etc.)
- 2 cups EB Flour
- 1/4 cup cocoa powder
- 1/2 cup chocolate chip
In a mixing bowl, blend on medium avocado and banana until pureed. Add in sugar.
In a separate bowl add salt, baking powder, baking soda, flour, cocoa. In a measuring cup add oil, lemon juice and eggs.
Add flour mix to avocado/banana blend while the mixer is on low. Blend until it is incorporated. Add liquids. Mix on high for 1-2 minutes.
Add in chocolate chips.
Bake at 350 for 50-60 minutes, check with probe for doneness, may need another 10 min. Cool on a wire rack, slice, and serve.
