Chocolate Banana Bread

Ingredients

  • 1 medium avocado
  • 2 ripe bananas
  • 3/4 cup organic sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 1/4 cup oil (avocado, sunflower, etc.)
  • 2 cups EB Flour
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate chip

Instructions

  1. In a mixing bowl, blend on medium avocado and banana until pureed. Add in sugar.

    In a separate bowl add salt, baking powder, baking soda, flour, cocoa. In a measuring cup add oil, lemon juice and eggs.

    Add flour mix to avocado/banana blend while the mixer is on low.  Blend until it is incorporated.  Add liquids. Mix on high for 1-2 minutes.

    Add in chocolate chips.

    Bake at 350 for 50-60 minutes, check with probe for doneness, may need another 10 min. Cool on a wire rack, slice, and serve.

Recipe Notes

Can omit eggs if needed or substitute.
